AVOCADO & CUCUMBER RAITA

 

Looking for something to liven up your meals? This delicious creamy avocado and cucumbber raita is a winning addition! Completely free from dairy this vegan side dish could be served with a delicious fragrant curry, a baked sweet potato or some crunchy crackers.

The possibilities are endless!

With the addition of lime juice, this keeps for around 4-5 days so you can make ahead for the week. You could even at some roasted flaked almonds for extra crunch.

Ingredients:

  • 2 x ripe avocados
  • 1/2 cucumber
  • 1 cup good quality coconut milk
  • Pinch salt
  • Pomegranate
  • Handful of choppedĀ coriander
  • Handful chopped mint
  • Juice of one lime

Method:

Blend avocados with the lime juice, season with some salt and mix through the coconut milk and chopped coriander.

Scatter some fresh pomegranate for extra flavour and crunch!
