RASPBERRY, STRAWBERRY & PISTACHIO VEGAN CHEESECAKE

It’s been a while since I posted a recipe. Ironically, I have been baking more than ever.

After my stint in Sri Lanka, I hopped the borders over to the Southern part of India. Based in Varkala in Kerala, I am volunteering at Soul and Surf. It’s a real chore waking up to surf every morning, baking cakes and watching beautiful sunsets by the sea….

I get to play around in the kitchen almost everyday, baking a selection of cakes and raw treats to serve in the cafe. A few battle to face out here in the heat mean it’s difficult to serve all cake types. In particular a delicious cheesecake, something I have been craving for months!

I made this recipe last year and thought it was perfect timing to share with Spring serving up delicious berries in abundance at home.

This takes a little time to make but it’s totally worth it and sure to impress!

Being surrounded by tropical fruits such as pineapple, mango and papaya, I can’t wait to try another flavour combination, India style!
