NECTARINE & GINGER CHUTNEY

Happy Monday! If your anything like me you will be having a hard time facing Monday. Having that extra coffee and dwelling on the oh so familiar drab weather.  On a more positive note, this delicious chutney! Perfect with Indian food or a nice accompaniment to a cracker. I had some juicy nectarines and thought I’d trial this recipe out and it worked really well!    Ingredients:

  • 2 ripe nectarines
  • 1 tbsp chopped fresh ginger
  • 3 tbsp maple syrup
  • 2 glugs of cider vinegar
  • 1 tsp cardoman seeds
  • Water

Finely chop the ginger and nectarines. Mix all ingredients in a pan with half a cup of water and let this reduce for 30 mins on a low heat. Allow to cool and pop into an air tight jar.  Easy!
