Happy Tuesday!

It was an early start for me and I am so so tired. This week will be a long one! I caught up with a friend last night who had been travelling through America. We of course had a few wines.

On a Monday I hear you say!? I know. And this is why I feel so rubbish today.

I fancied something light and nourishing for dinner and had some radishes in the fridge. The colour on radishes is so lovely and inviting. They add so much vibrancy to a dish.

I actually served these with some cooked chicken I had but for any veggies you can cut the meat and relish in the radish alone!


  • Radishes
  • 4 x cloves garlic
  • 1 X red onion
  • Extra virgin olive oil
  • salt & pepper
  • rosemary

Preheat your oven to 180 degrees.

Chop the radish into halves and quarter the onion. Scatter across your oven tray seasoning with salt and pepper and drizzle the olive oil. Add the rosemary & garlic and mix the ingredients together.

Place in the oven for 25 minutes, checking and tossing half way through.

These are a delicious substitute to potato, enjoy!
