So, there is definitely nothing new about the winning combo of bacon and avocado in between some bread, however, this recipe is Paleo!
If your anything like me, this is the breakfast of kings. I love crisp and salt bacon with delicious smashed avocado. The bread for the recipe is simple to make and can also be toasted which adds another element of crunch.
You can whip this up super quickly in the morning too so it’s a breakfast for any day of the week.
As it’s so simple, I just have pics of the finished article. It is just a sandwich after all 😉
- 1/2 cup tapioca flour
- 3/4 cup coconut milk
- 1/2 cup ground almond
- baking powder
- Salt & Pepper
- Lime juice
Place the oven on to preheat at 180 degrees.
For the bread, simply combine all the ingredients into one bowl and mix together. If you wanted a granary time bread you could add some flaxseed.
Place greaseproof paper onto a flat tray and split the mixture, creating pita brea like shapes.
Pop into the oven and cook for 12 minutes. After 12 minutes turn and cook for a further 4.
Whilst the bread is baking, place the bacon under the grill.
In a bowl, smash the avocado with some seasoning and a little lime juice and chopped fresh basil.
Remove the bread from the oven and pop into the toaster to crisp and add some crunch.
Smother the avocado onto your toast with the bacon and EAT!
