Happy Easter Weekend!

I will mostly be spending mine walking the pooch and frolicking in the forest. Also spending as little as possible ahead of my trip.

Just 10 days until I fly into Kuala Lumpur for my 3 month adventure!

Eating Paleo can be expensive, totally worth it, but expensive.

As every penny counts, I wanted to make something a little cheaper. I often eat the nakd bars as a quick fix so thought they could feature in this recipe.

  • 2 x over ripe bananas
  • 130gms bag of naked cocoa bites
  • 1 cup chopped dates
  • 1 x cup unsweetened almond milk + a drop extra for the banana topping.
  • 3 x heaped tbsp coconut oil
  • Raw chocolate to top

I have a handy little cake tin perfect for bit size treats. If you don’t have one of these you could also try using the truffle cake cases.

If you are using a tin, grease lightly with coconut oil.

Use you hands to mould the naked bars into the base, two pcs per cake.

In a saucepan, add the chopped dates and half a cup of the almond milk. Gently stir on a low heat, the dates will begin to breakdown and the milk will thicken creating a toffee like texture, continue but adding the remaining almond milk.

If you want a smooth mix you could blend. Place a Ā heaped teaspoon of the toffee onto the naked bases and spread. You will have some remaining mix, leave this to one side.

In another pan, break down the bananas, add the coconut oil and a drop of almond milk (about 50ml). Keep on a low heat and allow the ingredients to mix together and thicken for about 5 minutes.

Spoon the banana mix onto the toffee and leave to cool in the fridge for a minimum of one hour.

With the leftover toffee, place a little on top of each cake

Grate some raw chocolate on top to finish.
