ALMOND, CARROT & COURGETTE NOODLES

I’m back!

Well, not in London. I am spending some time in South of France to deliver lots of good food to your table.

My time in Asia was awesome! I can’t wait to explore more of the world. I think the next stop for backpacking will be India.

On my recent trip I visited Vietnam, Malaysia and Indonesia.

I tried so many foods, it was amazing to see what people eat around the world. Of course you can always find western dishes popping up in the main cities. One thing I won’t miss, is the amount of sugar put in foods in Asia. Sugar is added to EVERYTHING. Even fruit juices.

My body is in dire need of a healthy cleanse to get me back to normal.

Ahead of the many dishes I have planned for the next few weeks. This one is a simple side dish or light meal. As you will see, I haven’t grown tired of the Asian flavours yet! 😉

 

Ingredients:

 

  • 1 x courgette
  • 1 x carrot
  • 1 x handful corriander
  • 1 tbsp coconut aminos (non paleo can use light soy)
  • 1 handful almond flakes

In a bowl, spiralize the carrot and courgette. Add the coconut aminos and then use scissors to chop the coriander.

In a heatproof pan, add the flaked almonds and lightly toast over the heat.

Add to the noodles and mix.

Easy peasy!

  1. Enjoy your time! and you just arrived when the sun and heat finally showed up!! Your fresh and cleansing side dish sounds just right for this hot weather 🙂 welcome back to our side of the world, and of course I encourage you to travel mooooooore (and hopefully soon!)

    • Definitely travelling more over the next year. Just need to save a few more pounds. Sadly it could take a little longer to get what I need thanks to Brexit and the impending doom of the £!! 🙁
